Chaos Menu
(n.) A chaos menu is a series of dishes that are linked not by their cuisine, ingredients or techniques, but by a theme or story that may be deeply resonant to the chef. Each dish contains combinations of ingredients that don't typically go together. At worst a chaos menu is incoherent, but it can have surprisingly positive results.
CONTENT WARNING Carmy is a high end chef who inherits the family sandwich shop in Chicago after his older brother's suicide. He has PTSD from an abusive mother and the abusive boss in the pressure cooker Michelin star restaurant he worked at. He treats it using AA meetings and by transforming the family business into a fine dining experience that serves elevated takes on his mom's traditional recipes: a chaos menu. WHAT IS THEIR RELATIONSHIP TO WEALTH?: Carmy grew up dysfunctionally upper middle class; the kind of thing where everyone in the family is on that grindset and most people are in big debt to the banks to invest in property or business, the family home is a nice big five bedroom, nobody is ever complacent about money even though they can afford to spend it. For Carmy's part he's pretty bad at money, as an adult with a well paying job he invested a lot of his money in vintage denim and $90 white tshirts and rare out of print cookbooks. He runs his restaurant at a loss because he buys the most expensive ingredients and often throws away entire plates of expensive food. His business partners and bookkeepers are constantly trying to rein him in but he just thinks there's more important things.

NAME 1-3 VICES YOUR CHARACTER INDULGES IN: Carmy is strictly straight-edge and pretty chaste. While he buys $10000 butter from Orwell, Canada but doesn't really eat the expensive food he cooks except to taste test. He recently quit smoking, which was his main vice. So genuinely none? He's deeply repressed and unwell and has devoted his life to one thing.
WHAT IS YOUR CHARACTER'S LIQUOR OF CHOICE?: None. This man goes to the AA friends and family meetings.
HOW DOES YOUR CHARACTER LIKE THEIR EGGS?: Separate yolks. Whisk (not a fork) with kosher salt and heavy cream. Put whites in an electric blender, then strain through a chinois. Fold the yolks through the whites, pour immediately into a pan of browned butter. Using a wooden spatula, carefully lift up and flip segments of the mixture as they cook, pressing curds to give the cooked skin a crinkled appearance. Continue until pan is turned and eggs are mostly sealed. Plate with fresh sourdough, English mustard, baby spinach.
